About the Founder

Diane Wright Hoffpauer, Founder and Managing Director, formed Light Heart in 2004 after working in the food
industry for 24 years. She has started several businesses, and has acquired invaluable experience with nutraceuticals and
technical service/product development for global food and nutraceutical companies. In her early career, she worked for a local
specialty canning company, B.F. Trappey's Sons (now Allen Canning Co.) and developed several low-sodium products. She formed
a product development company, Gourmet Technologies, Inc. which produced a line of frozen Cajun products, bakery products,
seasoning blends and a line of unique sauces. In 1983, she joined her family's company, Wright Enrichment, Inc., as Vice President
of Scientific Affairs. In January of 2004, Diane left Wright Enrichment, Inc. to form Light Heart LLC & develop nutraceutical
ingredients for the food & dietary supplement industry. During her career, Diane has established numerous contacts in
the food industry and has presented technical and scientific presentations around the world, including a presentation at the
Gluten Free Symposium in Cork, Ireland in 2007. She has published articles for trade journals, books and newspapers,
including a contribution to the recent publication by AACC International, Rice Chemistry and Technology, Third Edition.
